i admit.

i just don't love lentils. i don't know why; i love most beans and legumes. they always seem so boring, like they don't have enough flavor or something. yet, i made a batch of them the other night (i have 2 jars of lentils, oddly). i eventually tossed them with sauteed mushrooms and onions and threw it all on corn tortillas with avocado (an imperfect one, i don't know what i was thinking buying it in january. damn cooperative.) and topped it all with shredded hoop cheese. and tomatillo salsa. not bad. not bad at all.

i ate 3 tacos. i am usually a 2-taco kind of girl. so there's that.

taco extravaganza.

a bit of late july taco madness.

casey and shira and i were on a mini-quest to eat up the goodness that are the tacos in durham. (what is in the water over there? everything is just better, you know?) visits to nantaco and la vaquita were in order. spicy awesome tacos consumed. for the vegetarians, nanataco has more options, including a surprising fried green tomato taco (and all the salsa options above)! but seriously, la vacquita, you have my heart.

a little round-up.

days sixteen through nineteen.

here we go.

day sixteen: shira cooked up this amazing lemon rice from bon appetit (we are really putting them to work these days!) it was delicious and lemony and nutty and just awesome.

i put together a salad from bought, borrowed, and stolen. you toss bibb lettuce (i used boston--it's similar in its pillowy nature) with chopped artichokes (in oil) with peas and corn which are boiled just for a minute with the eggs. you add 2 tbsp of olive oil and some sea salt and black pepper and toss the whole thing together. slice the eggs and add a little turmeric to the tops of them.

seriously. this dinner was absolutely incredible.

day seventeen: taco-deficient we were... so, we sauteed white kidney beans with onions, garlic, and jalapeno and made a little box of spanish rice. the tacos included the bean mixture with radishes and tomatoes and salsa and monterey jack cheese.
day eighteen:  vegetarian sushi with carrots, cucumbers, and avocado. a little side of broccoli sauteed in seasame oil with sesame seeds, sea salt, and crushed red pepper.
day nineteen: late, late dinner tacos with alex. i think i put everything i had leftover in the fridge into those tacos. no photos.

going way back.

june 30th. tacos with shira. plus beer tasting.
flour tortillas  + black-eyed peas + avocado + mushrooms + onions + salsa

i am incredibly behind in this blogging. and have tons of work to do. i'll catch up in august or something.

chubby chubby.

casey bought a groupon for chubby's tacos, which meant we could have twice the amount of tacos for half the price. we had both heard lovely things about chubby's so it just seemed right. there was quite a bit to choose from, so i just started ordering all the vegetarian goodies until i thought we'd had enough.
3 kinds of tacos (including a chile relleno taco), a spinach gordita platter with rice and black beans, a couple of mexican beers. we were so full of greasy goodness that we had to take a little walk around the neighborhood before we could get back in the car.

overall, it was pretty delicious, but nothing to write home about, though casey says i write home about everything (e.g., this blog, the postcards, and the like). i wanted spicier overall, though i must say that the salsas were awesome. and there were like 8 from which to choose. insanity.

we've got another groupon so more treats are to be had.

**that incredible face he's making is because he's hungry and all i want to do is photograph the food. adorable, huh?
