kim made a pie for valentine's day. she became obsessed with making this pie early saturday, and planned her entire day around its creation. i am sure you have noticed, from this blog, that i cook for kim fairly often. i think that if she were left to her own devices, she might just eat processed insanity. not food.
this is a strawberry cream pie. i asked if that meant heavy cream or whipped cream and she confessed that she was unsure. you see, this pie's recipe had to be transcribed during a phone conversation with an aunt she has somewhere in the south. this is a special pie. a family pie.
i don't know its exact recipe. i believe the secret to its tastiness is that the "cream" is a combination of cool whip and cream cheese. sounds weird because it is. but really, this is a good pie. full of strawberries in syrup and vanilla and some sort of flaky crust made out of god knows what. yum.

You made this pie sound so much worse than it was. There was, in fact, ORGANIC raw sugar in this pie and no syrup. Instead of following Aunt Darcy's recipe which involved, yes I admit, some kind of processed strawberry syrup; I made my own by blending the strawberries and boiling them with the organic raw sugar. Now, I admit that no actual effort was made on my part to make this pie healthier (any use of organic ingredients or healthier alternatives was accidental and only possible because in addition to not cooking for our household I also don't grocery shop for our household), but there is a valid reason i didn't make this pie with whipped tofu; I wanted it to taste good! And yes, yes, yes, sure...cool whip is probably on the top ten list of "products you'd never find at the Park Slope Food Cooperative", but guess what it tastes good! And pie is supposed to taste good!! And you know how I know this pie tasted good, cause I watched you lick your plate.
FYI..I always read your blog! Last week I showed it to my coworkers.
there has been some of suggestion that maybe i didn't like this pie. in fact, i loved this pie.
the blog is a place for me to talk about food and agricultural policy, and i tend to veer on the side of sustainable, which does not really include over-processed foods like high fructose corn syrup and hydrogenated oils.
no one suggested this pie should have been any different. because it should not have been ANY different. i did not read the packaging of the cool whip so that i would not really know what is in it.
this pie was incredible. but not organic. and that's ok, too.
cream cheese and Cool Whip AND organic sugar!!!
