this week's baked sunday recipe: rosemary-apricot squares.
but, matt and renato, this recipe has WAY too many appliances. a food processor, a stand mixer, and cooking on the stovetop, in addition to the oven?! it's a lot to handwash. and a couple of hours in the kitchen just preparing and cooking.
luckily, they are absolutely delicious.
the pecans were stupid expensive, so i used almonds, which i like better anyhow. additionally, i had no brandy so i left it out, but i think that's ok. the apricot portion is really fruity and full of honey.
the most decadent breakfast.

I love that you used almonds as they are perfect with apricots. Your bars look great!
Using almonds in place of pecans is a great idea. I love the taste of almonds as well. I'll have to try that next time. These turned out beautifully!
thanks! i felt it was risky to use the almonds--especially after all the love gushing from the authors at the introduction to the recipe--but it just made sense. and luckily, it worked out.
LOL! I didn't think about all the appliances that were used!! You are right....there were alot, but sooo worth it! Yours look delicious!
I like that you subbed the almonds and I bet leaving out the brandy didn't matter with these one bit. Your bars look great!
for me, the dried fruit was the most expensive component of the recipe, i almost cried when i burned my first batch! i'm glad we haven't come across a recipe where the dishes were not worth the final product :)
Had the same thought about the dishes. I found fairly cheap apricots and pecans at the farmer's market, so that worked out well, but almonds sound good too.
I loved these bars too.
While Seattle Pastry Girl is offline (hoping everything is okay with her), there's a temporary Facebook group to post our Baked Sunday Morning entries at http://on.fb.me/nKeKQd. Could you help spread the word?
I hear ya on making a mess in the kitchen. Desserts always seem to do that. But these do look delicious!
