The roasted parsnips have been tasting a whole lot like candy to me. Stuff is caramelizing during the roasting. Creamy, sweet, nutty. And crispy and fatty, because I tossed them in oil. Carrots are too watery to do this in the roasting pan, at least, for me. So I enjoy both a carrot and a 'snip, in different preparations.
